Chef Jay’s culinary journey began at the age of 18, when he started working at a small Japanese restaurant in Denver. There, he discovered his natural talent for cooking and his passion for the culinary arts.
After working at several reputable restaurants in New York City, including Morimoto, Catch, and Haru, Chef Jay honed his skills in Japanese cuisine. He is particularly skilled in careful presentation and the use of simple ingredients to create complex flavors.
In 2023, Chef Jay partnered with Chef Tony to open AI Sushi, a restaurant that showcases their shared passion for Japanese cuisine. Together, they have created a menu that features authentic and creative dishes that are sure to please both the eye and the palate.
